A special #clientcreation from Monterey RTC. With help from Chef Gladys, the client made shrimp ceviche and a tofu option (so vegan clients could enjoy it), served with tostadas, sour cream, and avocado! This dish has personal significance for the client, whose dad makes ceviche every year for their birthday. Chef Gladys also has fond childhood memories of enjoying shrimp ceviche as well, so the dish holds sentimental value for them both (in addition to being delicious!)
